World’s Best Chocolate Chip Passover Cookies PDF Print E-mail

Ingredients:

1 cup margarine
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
1 cup potato starch
1 cup cake meal
1 teaspoon baking soda
1 teaspoon salt
1 12–ounce bag chocolate chips

Directions:

Preheat oven to 375 degrees. Spray a pan lightly with oil and line with parchment paper.

Cream margarine and sugars. Add eggs and vanilla. Mix next four ingredients together and add slowly to batter.Mix with beater on slow speed until combined. Batter will be very sticky. Add chocolate chips and mix into batter.For easier handling, refrigerate batter for a few hours.

Shape into 1‑1 1/2" balls (approximately) and place on pan. Leave some space between cookie balls to allow for some spread.

Bake for 10 ‑ 15 minutes, or until browned.Let cool, and remove from pan carefully.

Yield:  makes 7 dozen
